Porque los ingredientes pueden formar grumos irregulares y \u00e1speros que no fluyen con suavidad cuando se combinan con manteca de cacao mediante otros m\u00e9todos.<\/p>\n\n\n\n<p>Mientras que el proceso de conchado rompe los trozos de materia prima en part\u00edculas m\u00e1s finas, la acci\u00f3n mec\u00e1nica tambi\u00e9n rompe los grupos de part\u00edculas s\u00f3lidas y reduce la fricci\u00f3n entre las part\u00edculas para producir un chocolate suave.<\/p>\n\n\n\n<p>El refinado y conchado del chocolate se divide en dos pasos. El primer paso consiste en eliminar el exceso de agua y purificar el aroma; el segundo paso consiste en volver a a\u00f1adir manteca de cacao y otros ingredientes, removerlos y molerlos en peque\u00f1as mol\u00e9culas m\u00e1s finas, para formar un chocolate de textura delicada y suave.
